Bow String Differences?

What is the Difference between bow string numbers. I mean you see some string that are made out of #340 string and some that are made of #8125? There is a big difference in cost for the two different bow strings. Do the function the same?

I know there are only two string material manufacturers. Brownell and BCY.

Also know that 8125 is made by BCY as are other string materials. I've never even heard of #340. Who makes it?
