Is it possible to set the draw length on my 08 cheetah to 30"

If you have the full set of modules it is possible. Just look up the right module (it should be listed up in your manual) and change your current one against that one.

By these specs i would say no!

In this case i ask myself why my pro shop offers it with a maximum draw length of 30".

If Martin says 29" is the maximum it might be right.

My pro shop said the same thing, but when they went to order it guess what.....it only comes in 29".

Thats why I went with the Bengal, same bow, inch longer A to A and inch longer draw.

You could make youre draw length 30" but you would need to move the string to the #2 peg on youre cam AND add a 1/2" string loop but you wont net the speed of a true 30" draw length bow.

You could also get new strings in cables which should be around an half inch longer. You should get 30" with this setup but you would need new limbs to keep the draw weight.
