Good find. Thanks for sharing. Similar to the way I've been doing it. I am surprised at how many people don't butcher their own deer.

There's a sense of accomplishment when you process the animal you just killed. It's a good time to mellow out and reflect back on the hunt. Study the shot. I control how I want my meat cut. I always keep a clean process area. I know that the meat that goes in the bags are my deer and nobody else's deer that the butcher mass processes and just divided up. I just think I'm cleaner overall compared to some folks. I'm not the fastest processor but I am clean and do not waste much.
